Beets in the Garden

Here is a view from my garden! A few hours ago these beets were smothered in tall grass and prickly bushes. I had not planned on a garden this year, but these beets have been very resilient throughout the winter with no watering or weeding. Nature prevailed in my little cliff-side garden. The beets matured on the morning dew and I believe the blanket of weeds and grass helped keep them warm on those nights where the water frosted on the earth. Now that summer is coming I will put the weeds around the roots of the plants as a mulch.
I love the beet red. At the end of the afternoon I sat on the stone wall on the cliffs edge with a hot honey-ed green tea looking over the garden. Along with the beets I found romaine lettuce, fresh dill, anise and sage. I planted some tomato, cucumber and pepper seeds for our salads this summer. The Aegean colors are gifts to my eyes. As I write I still hold the reds and greens on the ever-blue Aegean. I will never get enough of them.
